Blabar muffins…Blueberry Stud muffins

We all love a muffin and one of our favourites is this morishly good one from Scandi kitchens book Fika & Hygge. The perfect healthier breakfast muffin or tasty snack. Wholesome, but not overly sweet it’s the perfect blueberry muffin to feel like a real treat & also be good for you too! Why not have a baking session with your children or just take some time out for some baking and indulgence in some fine home cooking.

Bronte has baked these delicious muffins in her cafe for years and has finally shared the secret in her book and we are giving you a sneak peak her too, but the book has so many delicious recipes and a real Dane to explain the art of Fika & Hygge we are all embracing so heartily here in the UK.

It’s such an easy recipe and so quick to do so perfect for a weekend baking session and tasty homemade Scandi muffins!

Recipe: Makes 6-7 large or 10 – 12 small muffins

Ingredients:

250g / 2 1/2 cups spelt flour

100g / 1/2 cup light brown soft sugar

75g/ 1 cup rolled / old fashioned porridge oats, plus extra for topping

1/2 tsp salt

1 tsp bicarbonate of / baking soda

2 tsp baking powder

1 tsp vanilla sugar or extract or use the seeds from one pod/bean

1 1/2 tsps ground cinnamon

1/2 tsp grated nutmeg

2 eggs

200 ml / 3/4 cup whole milk

75 ml / 1/3 cup sunflower oil

2 tsps apple sauce or compote

2 tsp maple syrup

2 ripe bananas

100g / 3/4 cup frozen or fresh blueberries

muffin tray lined in large tulip muffin cases or regular muffin cases.

Preheat the oven: 180 c ( 350 F) Gas 4

 

Combine all the dry ingredients in a mixing bowl and stir together.

Mix all the wet ingredients together in another bowl (apart from the bananas and berries). Add the wet ingredients to the dry ingredients and mix using a wooden spoon until combined.

Roughly mash the bananas and add to the mixture. If using frozen berries, fold them in now. Portion out the batter into the muffin cases. If using fresh blueberries, add these to the batter now. Top each muffin with a scattering of porridge oats.

 

Bake in a preheated oven for 30 minutes or until a skewer inserted into the middle comes out clean. The baking time will vary depending on the size of the muffins. Coll on a wire rack., if you can wait…… Then EAT!!!!
